Elaboración/Winemaking: Maceración tradicional en depositos de acero inoxidable, con uva 100% despalillada y 3 ó 4 remontados diarios de 30 minutos. Temperatura de fermentación controlada a 28-30 °C durante 18-25 días. Posterior descubado dejando reposar antes del llenado de barricas - A traditional maceration is done with 100% de-stemmed grape. Must is pumped-over 3 or 4 times a day lasting 30 minutes each. Fermentation takes place at a controlled temperature of 28-30 °C during 18-25 days. Afterwards, wine is run-off and left to settling before barrels are filled.
Tiempo de Crianza en Barrica/Barrel Aging: De 18 a 24 meses según evolución con trasiegos cada 3 meses - Depending on evolution, barrel aging lasts between 18 and 24 months and is racked every 3 months.
Tiempo de Crianza en Botella/Bottle Aging Mínimo 9 meses antes de su salida al mercado. En durmientes metálicos y nave aislada no superando los 18 °C de temperatura - Wine ages in bottle a minimum of 9 months prior being marketed. Bottles are kept lying down on metallic scantling in isolated facility where temperature never exceeds 18 °C.
