Elaboración/Winemaking: Fermentación tradicional en depositos de acero inoxidable, con uva 100% despalillada, con 3 remontados diarios, a temperatura controlada de 28-30ºC durante 12-15 días con posterior descubado dejando asentar antes del llenado las barricas – Fermentation traditionally carried out in stainless steel vats with 100% de-stemmed grape. Three times a day must is pumped over at a controlled temperature of 28-30ºC during 12-15 days. Subsequently, wine is run-off and left to settling before barrels are filled
Tiempo de crianza en barrica/Barrel aging: De 8 a 12 meses con trasiegos cada 3 meses – Between 8 and 12 months of barrel ageing. Wine is racked every 3 months
Tiempo de crianza en botella/Bottle aging: Mínimo 6 meses antes de su comercialización. Tumbadas en durmientes metálicos, en nave aislada donde no se superan los 18ºC de Temperatura – Wine remains a minimum of 6 months aging in bottles before being marketed. They are kept lying down on metallic scantling in an isolated facility where temperature never exceeds 18ºC
